Do not rush the sauce
Don’t rush the sauce, it’s worth it. After cooking the meatballs, pour off most of the oil, but keep those golden bits for flavor. Whisk the flour and broth until smooth, then finish with a spoonful of sour cream or cream of that silky texture. Too big? A quick burst of milk sends it right back.
