This recipe makes about 2 cups of sauce – the last one in your fridge weeks! If you would like a small batch, simply use this amount: 1 part soy sauce, 1 part of sugar, 1/2 is, 1/2 part of the rice section of the vinegar.

1 cup (235ml) low-sodium soy

1 cup (200G) critical sugar, see the sugar notes to reduce sugar

1/2 cup (120ml) Wake (Japanese Wine)

1/4 cup (60ml) vinegar of rice

1 heaping teaspoon ginger ginger well, see notes
