Supplements and Substitutions

For the cake, you will need:

Cake ingredients: sugar, vanilla extract, eggs, flour, salt, baking powder, melted butter and sour dough.

Sour dough. You don’t need to feed your starter to make this cake: use a sourdough starter.

If you use sourdough disposal, the length of time in the fridge usually does not affect the result – as long as it is well stored and does not show signs of spoilage such as bad bacteria or mold. I made this cake with leftovers that were two months old, and it turned out delicious!

Baking powder. Make sure it works. Do not add baking soda, and use the full amount to get the best cake rise.

All purpose flour. stick to white all-purpose flour when making this recipe.

Butter. We use melted butter in this recipe. I prefer to bake using unsalted butter, but salted butter also works for this cake. If you use salted butter, you can leave out the salt.

For the streusel:

Almonds. Use chopped, crushed or chopped almonds. For a twist, substitute hazelnuts or pecans.

Allergies in nuts? Substitute rolled oats for a nut-free crunch.

And finally, for the apple filling:

an apple. For this cake, I like to use Ambrosia apples, as they are my favorite and hold their shape during baking. Honeycrisp, Gala, and Golden Delicious apples are also excellent choices. If you want a sweet-tart flavor, Granny Smith apples add a nice contrast.

Lemon juice. Fresh lemon juice is my go-to, but you can substitute lemon juice. White vinegar also works well. Just don’t skip this ingredient, as it brightens the apple filling.

Brown sugar: You can use light brown or dark brown sugar (this is for both streusel and filling).

How to do it

You can make this cake without a mixer: three bowls, a whisk or a spatula, and your hands are all you need! It’s easy and quick to assemble.

Start by saying preheat your oven to 350°Fso it’s ready to go once you put everything together.

Am I need of onel my aapples for bwhat?

Yes, peeling apples is definitely worth the effort! The texture of apple peels in a baked cake is not pleasant, so to keep the filling smooth and soft, peel and mash the apples before cutting them into small cubes. This will give you the best texture for your sour apple coffee cake.

Is there coffee in the coffee cake?

No! Coffee cake does not actually contain coffee or caffeine. The term “coffee cake” comes from the tradition of enjoying a piece of delicious cake with a hot cup of coffee. A classic pairing with roots in German baking!

What pan should I use to bake this cake?

For this recipe, a 9×13-inch baking pan works best. It allows the cake to bake evenly, giving you that perfect crumb and apple-to-cake ratio.

Can I freeze this cake?

You can freeze this cake after baking. Once baked, let the cake cool completely. Wrap tightly and freeze for up to 3 months. When you’re ready to serve, just let it come to room temperature.

Expert Tips

This batter is thickso spreading it on the pan can be tricky. Take your time to press it into an even layer.

For best results, cut small apples so they bake evenly. If the pieces are too big, they may remain hard, even after the cake is fully baked.

If you use melted butter, the batter won’t hold much air, so the height of the cake depends entirely on the baking powder. This means that it is very important to use fresh, effective baking powder – do not reduce the amount called for in the recipe!

Start contribution test at the 45-minute mark. Insert a toothpick into the center of the cake; if it comes out clean or with just a few crumbs, your cake is ready.

Pro Tip for a Lighter Sweet Cake: If you prefer a heavier sweetness, you can reduce the sugar in the apple filling or use only half of the streusel topping. Make half the streusel or freeze any leftovers for future use!
