Food I Didn’t Know I Needed.
After all, that was fun.
What you see is a bowl of caramelized peanut chicken, on a messy bed of vermicelli noodles, and some herbs and cucumber salad, topped with that peanut sauce.
After feeling like a long post-holiday / overcooking / cooking kind of life, my first bite of this just woke me up inside. It rejuvenated me in the right way.
Second of all, and related – have you seen Trader Joe’s Peanut Satay Sauce? It’s your ticket to making this stupidly easy. Sweet, thick, creamy, and mild enough that 4 out of 4 of our little Scandinavian family loved it. You should buy a jar and do this.
If you don’t have a Trader Joe’s near you, try this peanut sauce! I use it the same way as tofu and think it would be perfect here. The corn oil in there is refreshing for a delicious cook.
And not surprisingly, I still love and use these PFAS-free pans, and they work great for this recipe.
January isn’t really anyone’s favorite (is it anyone’s favorite)? but you know what? We have noodles. We have caramelized chicken nuggets. We have fresh mint, little jars of sauce, and the joy of taste.
Let’s have a big bowl of noodles / chicken / peanut sauce / salad and remember that we will be fine.
