Supplements and Substitutions
For the cake, you will need:
Sour dough. You don’t need to feed your starter to make this cake: use a sourdough starter.
If you use sourdough disposal, the length of time in the fridge usually does not affect the result – as long as it is well stored and does not show signs of spoilage such as bad bacteria or mold. I made this cake with leftovers that were two months old, and it turned out delicious!
Baking powder. Make sure it works. Do not add baking soda, and use the full amount to get the best cake rise.
All purpose flour. stick to white all-purpose flour when making this recipe.
Butter. We use melted butter in this recipe. I prefer to bake using unsalted butter, but salted butter also works for this cake. If you use salted butter, you can leave out the salt.
For the streusel:
Almonds. Use chopped, crushed or chopped almonds. For a twist, substitute hazelnuts or pecans.
Allergies in nuts? Substitute rolled oats for a nut-free crunch.
And finally, for the apple filling:
an apple. For this cake, I like to use Ambrosia apples, as they are my favorite and hold their shape during baking. Honeycrisp, Gala, and Golden Delicious apples are also excellent choices. If you want a sweet-tart flavor, Granny Smith apples add a nice contrast.
Lemon juice. Fresh lemon juice is my go-to, but you can substitute lemon juice. White vinegar also works well. Just don’t skip this ingredient, as it brightens the apple filling.
Brown sugar: You can use light brown or dark brown sugar (this is for both streusel and filling).

You can make this cake without a mixer: three bowls, a whisk or a spatula, and your hands are all you need! It’s easy and quick to assemble.

Step 01. Peel, core, and cut the apples. In a medium bowl, add sliced apples, brown sugar, lemon juice or white vinegar, melted butter, and cinnamon. Stir to coat the apples with the ingredients. Set the filling aside.
Step 02. In a medium bowl, add the all-purpose flour, chopped almonds, brown and granulated sugar, cinnamon, and melted butter. Mix until there are no lumps. Set the streusel aside.
Step 03. In a large bowl, cream the melted butter with the granulated sugar until combined.
Step 04. Add sourdough, egg yolks, and vanilla extract. Whisk until combined.
Step 05. Add the baking powder, salt, and all-purpose flour, mixing until the flour is combined and a thick batter forms.
Step 06. Spread the entire batter into a greased 9×13 baking pan, spreading it into an even layer with a spatula.
Step 07. Spread the apple filling evenly over the batter.
Step 08. Cover the apples with the streusel.
Step 09. Bake the cake in the middle for about 50 to 55 minutes.

If you use melted butter, the batter won’t hold much air, so the height of the cake depends entirely on the baking powder. This means that it is very important to use fresh, effective baking powder – do not reduce the amount called for in the recipe!
