What is Banh Mi? Banh mi is a healthy and delicious Vietnamese sandwich. It’s also the perfect summer sandwich, with its crusty French bread, pickled vegetables, fresh herbs, and pops of zesty chilies. Traditionally, banh mi is also filled with a combination of cold cuts of Vietnamese-style pork. In true Cameron’s Seafood fashion, we remixed the protein filling to include buttery sweet chili shrimp (or, jumbo crab meat, if that’s your preference).

Banh Mi Make Ahead Options
For those who like to prepare ahead, this banh mi sandwich recipe has some ingredients just for you! Pickled carrots and radishes can be made 3-4 days in advance. The banh mi drizzle sauce can be made a week or more in advance.
Sweet Chili Shrimp Banh Mi
Pickled Carrots and Radishes
- 1 ½ cup hot water
- ½ cup granulated sugar
- 4 teaspoons salt
- ¾ cup rice vinegar
- 3 carrots the peel is then cut into matchsticks
- 6-8 radishes the peel is then cut into matchsticks
Banh Mi Drizzle Sauce
- 3 of spoons low soy sauce
- 2 of spoons fish sauce
- 1 a clove of garlic peeled and ground
- 1 a teaspoon fresh ginger peeled and ground
- 2 of spoons granulated sugar
Banh Mi Sandwich
- 1 a spoon butter
- 1 lb. Cameron’s Seafood fresh shrimp or spiced shrimp or jumbo cocktail shrimp peeled, if necessary
- ⅓ cup sweet chili sauce
- 2 baguettes or long loaves of French bread half was divided
- ½ cup mayonnaise
- 1 medium cucumber cut short
- 1 ½ cups pickled carrots and radishes
- 1 cup fresh cilantro leaves
- ½ cup fresh scallions
- 1-2 red pepper cut short
- 2-3 of spoons banh mi drizzle sauce
Pickled Carrots and Radishes

Place the hot water, granulated sugar, and salt in a large, resealable container. Stir until the sugar and salt are dissolved. Once melted, add the rice vinegar, stirring to combine. Place the carrots and radishes in a bowl, make sure the vegetables are soaked, cover, and refrigerate until ready to use.
Banh Mi Drizzle Sauce

Mix the ingredients together in a small saucepan and whisk to combine. Bring the mixture to medium heat, stirring constantly. Once the sugar has dissolved, remove from heat and set aside to cool. Transfer to an airtight container and refrigerate until ready to use.

Now that our pre-made ingredients are taken care of, let’s assemble this summer sandwich!

Heat the butter in a large nonstick pan over medium heat. Once melted add shrimp and sweet chili sauce, toss to coat. Cook for 2-3 minutes, stirring occasionally, or until the sauce covers the shrimp well. Remove from heat and set aside.

Spread mayo on a split baguette. Divide the shrimp, cucumbers, cucumbers, cilantro, scallions, and peppers between the baguette halves. Brush each sandwich with a little sauce before serving.
